Is there a more perfect example of comfort food than homemade meatballs? I like to enjoy mine drenched in sauce with a bowl of spaghetti, and could not imagine a more singular pleasure. Not exactly the centerpiece of an idyllic dining scene. By mastering just a few simple kitchen techniques, you can ensure that you come out with perfect meatballs every time.
Be sure to choose the ground beef or meat that is the most pink or red; avoid meat with brown or grey spots. You can also make a mix of a lean meat such as lean beef or even ground turkey with a richer, fatty meat, such as veal, with great results. Many recipes for meatballs call for a melange of meat, including beef and pork, for a full flavored finished result.
Herbs are also key to making flavorful meatballs. Basil, oregano, and parsley are classic, but you can go a little bit adventurous, too. Do not scrimp. Ground lamb and pork are generally fatty enough on their own to stand up to the job without much tinkering. Or feel free to create your own blend, balancing fattier cuts with lean aim for a ratio of roughly 80 percent lean meat to 20 percent fatty. Bind strategically : That ground meat needs something to help hold it together.
While bread crumbs fresh or those pulled off a shelf are a common addition to Italian American recipes, be warned: too much can make the finished product dry and dense. Form the mixture by hand into meatballs. Heat the olive oil and melt the butter in a skillet over medium heat. Place the meatballs in the skillet, and cook, turning constantly, 20 minutes, or to desired doneness.

I think these are the best meatballs i ever had.
Since finding the recipe a feew months ago I have made them at least a dozen times. I did a few things different though. I added one extra clove of garlic per half pound of beef. I also did not follow the directions very well and actually mixed the butter and olive oil right into the whole mixture. They are delicious and so happy to have found a recipe that yields tender results even when using all beef.
I baked mine in the oven and both the bottoms and tops browned nicely. Made 1 oz balls and got 24 from recipe. I followed the recipe with a couple small differences. I whisked the egg thoroughly before adding to dry ingredients because recipe says minimal handling — a good idea btw — and wanted to be sure egg evenly spread.

I used ground beef and after mixing, I browned them briefly in oil on both sides but then dropped them in the sauce to continue cooking. Thank you for sharing, they were very good. All comments are moderated before appearing on the site.
